Cooking With Saeeda: Crispy Potato Dumplings


Ingredients for Potato mixture

  • 3 medium size potatoes (boiled and mashed)
  • 1 large onion finely chopped
  • 2-3 tbsps. fresh chopped coriander
  • 1 tsp salt or to taste
  • ¼ tsp turmeric
  • 1 tsp chilli flakes
  • 1 tsp garam masala
  • ½ tsp cumin seeds
  • ½ tsp caram seeds

Ingredients for the Batter

  • 1 mug of gram flour
  • ½-1 tsp salt
  • ½ tsp chilli flakes
  • Pinch of soda bicarbonate


  • Boil the potatoes and mash
  • Add chopped onions to mashed potato
  • Once this is done, mix all the spices, seeds and fresh coriander to the mashed potatoes and set aside.
  • Place oil in a deep frying pan/ wok and put on a medium heat.
  • For the batter, place all the gram flour into a bowl and slowly add water little by little and continuously stir until you get a nice thick batter mixture which will be used to coat the potato dumplings.
  • With the potato mixture start shaping the dumplings into small round balls.
  • Dip the dumplings into the batter until it is fully coated
  • Test the temperature of the oil by placing one dumpling first and then fry it until crisp and golden.
  • Add a few more dumplings and continue frying until all dumplings have been fried. (it should take approx. 2-3 minutes to fry a batch of dumplings).
  • Serve with a sauce/chutney of your choice however I would recommend Mint Sauce.
